Hope's Mushroom Cookbook is a compilation of her most
popular recipes for both commercially grown and wild mushrooms.
Hope spent 35 years collecting, preparing and testing these recipes
as she and her husband, Dr. Orson K. Miller Jr. Professor Emeritus
of Botany (Mycology) at Virginia Tech, traveled the world helping
discover and categorize the thousands of different fungi that inhabit
the Earth.
Some things included in the book are: ways to preserve
mushrooms, i.e. freezing, drying, or canning; nutritional information;
hints about choosing the best mushrooms in the store; storing mushrooms;
ways to substitute low fat ingredients for the usual fat-laden ones.
The book is set up by categories: appetizers,
soups, salads, sauces, main dishes-beef, main dishes-pork and lamb,
main dishes-poultry, main dishes-fish, main dishes-vegetarian, main
dishes-egg and cheese, vegetables, and favorite wild mushroom dishes.
Each section has its own index on the back of the divider page.
